For the second time this year, two remarkable cooks step out of their village kitchens and into Bellies En-Route’s space in downtown for an intimate afternoon of cooking, stories, and Egypt’s undiscovered culinary gems.

For one afternoon the road from field to table runs straight through downtown. At Bellies En-Route’s space, two Nawaya cooks bring their craft to a small circle of guests—inviting you to stir, taste and listen as they reveal the traditional secrets of Egyptian home-cooking. You’ll dive deep into the versatility of Roqaq, the simple flatbread that has carried its familiar warmth into Egyptian homes for generations. You will witness the magic of transforming humble dough into Roqaq, and then join Nawaya cooks in layering the traditional meat pie. You’ll end-up with a creation that has a golden, crusty exterior yielding to a rich, chewy, meaty interior of layered bread soaked in savory broth and ghee.

You’ll also join Nawaya cooks in hand-rolling a variety of roqaq rolls. This is where you’ll learn how the cooks have ingeniously innovated with this classic, adapting it to be more resourceful and economical. You will also join other guests in making a special seasonal salad. And to complete our meal? You will finish on a sweet note with making a delicious, silky balouza, a creamy dessert so simple, it can be recreated in every home.
